I’m always looking for a good excuse to make and eat yummy treats so I decided how better to enjoy this cold,colorful season then by baking and most importantly eating delicious seasonal cakes!
These deliciously spiced pumpkin cupcakes I have made were made from an amazing recipe from The Scran Line. Here’s how to make them:
Firstly you will need:
429 g all purpose flour
265 g caster sugar
1/2 tsp salt
3 tsp baking powder
300ml of milk
125ml of vegetable oil
125 g of unsalted butter
2 tbsp of greek yogurt
1 tsp of vanilla extract
2 large eggs
2 tbsp of pumpkin spice (for this you could use mixed spice and cinnamon)
4 tbsp of pumpkin puree
2 tbsp maple syrup
For The Icing:
3 tbsp mascarpone
2 tbsp dulce de leche
1 tsp vanilla
caramel for drizzling
Preheat your oven to 180° or 160° for a fan oven.
To start, add your flour, baking powder,caster sugar and salt to your mixing bowl, using a paddle attachment to mix. Mix everything on a low speed for 2 to 3 minutes to combine everything. Then add in the butter and mix until completely combined.
Next, to a large jug, add your milk, oil, maple syrup, yogurt, eggs, pumpkin spice, pumpkin puree and vanilla extract and whisk well.
Slowly add the contents of your jug to the dry ingredients and mix well.(don’t forget to scrape the sides and mix again)
Using an ice cream scoop or two large spoons, distribute the mixture evenly into each cupcake case. They should fill 3/4 of the cupcake cases.
bake for around 20-25 minutes until golden brown. Test with a toothpick, making sure that no mixture sticks to the toothpick after pulling it out. Take the cupcakes out of the trays and leave them on a cooling rack to cool.
On To The Frosting…
Because this frosting is made with fresh cream it is best to leave it in the fridge while the cupcakes are cooling.
To your large mixing bowl add your cream and mix on high speed until you have created soft peaks.Then add both the dulce de leche and mascarpone to your mixing bowl with the cream and mix until stiff peaks are formed.
To decorate your cupcakes, put your frosting in a piping bag and frost your cupcakes in a swirl. Then drizzle with caramel sauce and dust with pumpkin spice.Perfect! Now all that is left to do is sit back, eat and enjoy them…Because I certainly did!
